I accepted an offer to try Tari after I learned it’s a hot sauce crafted from Peruvian-grown peppers and considered Peru’s No. 1 hot sauce.
The amarillo and rocoto peppers are cultivated in Peru’s Andean region. The former is known as a Peruvian red pepper, but it’s more savory and has a bit more kick than its counterpart. The latter is known as a Peruvian yellow pepper, though it’s a milder and tangier version of an jalapeno.
These peppers, along with other ingredients, are stone ground using a batán to create their unique texture and flavor.
The Tari Amarillo ($8.49) makes for a wonderful everyday sauce. It wasn’t spicy but did have a nice tangy flavor that enhanced items like chicken and pulled pork.
The Tari Rocoto ($8.49) reminded me of a smoky aioli. It was an excellent, creamy sauce for veggies and fries, and it also worked well with tacos and rice. I agreed with the listed spice level of two out of five flames.
For anyone seeking new flavors, the Tari sauces are sure to please.
