I’ve been a fan of BetterBody Foods after trying its PBfit line and avocado oil mayo. That’s why I accepted an offer to try its organic coconut flour and organic coconut palm sugar.
It was enjoyable to open the jar of organic coconut flour ($13.48) and inhale the aroma of coconut. This flour is gluten-free, is non-GMO, has 5 g. of fiber per 2 Tbsp. serving (compared to 0.5 g in white flour) and has a lower glycemic index rating than white flour (45 vs. 71).
I used the organic coconut flour in biscuits and cookies. Of note, coconut flour absorbs a lot of moisture, so I had to add an extra egg and more liquid to the biscuit batter to get it to stick together. In fact, I probably should have used even more, as the biscuits were very crumbly, but at least they had a delicious coconut flavor. Same goes for the cookies (which included the organic coconut palm sugar) in terms of increasing the binding ingredients. You also need to let the biscuits and cookies sit for a while to further solidify before you dive in.
Within the category of flour and ancient grains, BetterBody Foods also makes organic oat flour, organic chia seeds and organic quinoa.

I don’t recall ever having tried organic coconut palm sugar ($5.98), which comes from the sap of the coconut palm tree. I was pleasantly surprised by its nutty and caramel flavors.
Compared to table sugar, organic coconut palm sugar has a lower glycemic index (54 vs. 63), with 40 calories per 2.5 tsp. serving. It also is gluten-free and non-GMO.
As mentioned, I used the organic coconut palm sugar in a batch of chocolate chip cookies, which were a hit among the people who tried them. In fact, none would have realized that organic coconut palm sugar was used had I not told them.
I also tried the palm sugar in my coffee, and I liked the “different” type of sweetness it provided compared to the Splenda I normally use.
